She seems pretty legit to me... She doesn't really edit her videos much and she pretty much eats everything in one or two takes. Maybe she vomits the food between part 1 and part 2 of her videos but it's still pretty impressive all things considered. The only thing is that sometimes the amount of food or water she consumes could kill a person and idk how tf she's handling that. To be honest even if she exaggerates things a little bit it's still super hot
